Tilapia Pineapple Samba

Ingredients

  • 4 pcs medium-sized Tilapia
  • 14 cup DOLE Pineapple Tidbits, syrup
  • 2 pcs calamansi
  • 1 tbsp salt
  • 14 cup vegetable oil
  • Salsa:
  • 2 tbsps vegetable oil
  • 1 tbsp DOLE Pineapple Tidbits syrup
  • 2 tbsps red onion, finely chopped
  • 1 cup tomatoes, cut into small cubes
  • 12 cup DOLE Pineapple Tidbits, drained
  • 8 pcs fresh basil leaves, finely chopped
  • Salt and pepper to taste

Procedure

  1. Make a marinade by combining DOLE Pineapple Tidbits syrup, calamansi, salt and pepper.
  2. Pour marinade over Tilapia and marinate for 15 minutes.
  3. To make the salsa, combine vegetable oil, syrup, onion, tomato, DOLE Pineapple Tidbits and basil leaves. Mix well and season with salt and pepper. Set aside.
  4. Heat up oil in a pan. Fry the Tilapia for 3-4 minutes per side or until golden brown.
  5. Put a tablespoon of salsa on each Tilapia. Serve immediately.
