Scrumptious Thai Coco-Tomato Chicken Curry

Ingredients

  • 1 pouch DOLE Tomato Sauce, 115 grams
  • 2 cup chicken breast (strips)
  • 1 cup fresh coconut milk
  • 12 cup water
  • 1 tbsp calamansi juice
  • 2 tbsp Thai fish sauce
  • 1 tbsp curry powder
  • 1 tsp white sugar
  • 1 medium red and green bell pepper
  • 1 medium onion (chopped)
  • 1 tbsp ginger (chopped)
  • Salt and pepper to taste
  • 2 tbsp oil

Procedure

  1. In a blender put all ingredients and blend till smooth except In a saucepan, heat oil and sauté onion, garlic and ginger until fragrant.
  2. Add chicken and bell peppers.
  3. Wait for the chicken to be half cooked, and then add coconut milk.
  4. Add DOLE Tomato Sauce, white sugar, fish sauce, calamansi juice, curry powder, water and mix.
  5. Add salt and pepper to taste. Let it simmer for 10-15 minutes, until sauce thickens.
  6. Serve over hot rice and enjoy!
