Paskong Pineapple Potato Salad

Ingredients

  • 1 kilo potato, boiled and sliced into chunks
  • 1 can DOLE Pineapple Chunks, 227g drained
  • 1 pc cucumber, sliced into small cubes
  • 1 pc carrot, peeled, boiled, and then sliced into small cubes
  • 1 cup peanuts, coarsely chopped
  • Mayonnaise, 2 cups or as needed
  • Salt and pepper to taste
  • 12 cup evaporated milk
  • 12 cup cooked bacon, sliced into smaller bits as toppings

Procedure

  1. In a big bowl, combine potatoes, DOLE Pineapple Chunks, carrots and cucumber.
  2. Add in the mayonnaise and mix thoroughly.
  3. Add in milk to adjust the consistency of the dressing
  4. Season with salt and pepper
  5. Top with peanuts and bacon bits to add crunch and flavor.
  6. Chill and serve.
