Pan-Fried Fish Fillet with Asian Pineapple Salsa

Ingredients

  • 500 g fish fillet
  • 1 medium finely chopped red onion
  • 1 tbsp chopped garlic
  • 1 tbsp chopped ginger
  • 1 medium red and green bell pepper sliced to strips
  • 1 tbsp tbsp finely chopped lemongrass
  • 14 cup vinegar
  • 1 tbsp sugar
  • 1 large finely chopped tomato
  • 1 can DOLE Pineapple Tidbits, 227 grams
  • Salt and pepper to taste
  • Oil for frying

Procedure

  1. Season fish with salt and pepper.
  2. Heat oil in pan and fry fish until cooked.
  3. In a mixing bowl mix together garlic, ginger, lemongrass, bell peppers, tomatoes, onions and DOLE Pineapple Tidbits (set aside).
  4. Mix sugar in vinegar until it dissolves then mix it in the remaining ingredients.
  5. Top the fish with ensalada mixture then serve!
