Fish with Pineapple Sweetness

Ingredients

  • 4 pineapple rings
  • 1 tbsp ginger, julienned
  • 500 g Cream Dory fillet, sliced into 4 pieces
  • 4 tbsp Coriander leaves, coarsely chopped
  • 4 tbsp sweet chili sauce
  • 4 tbsp soysauce
  • 1 can DOLE Pineapple Slices (227g)
  • Coriander leaves, extra, to serve
  • Salt and pepper to taste

Procedure

  1. Season fish with salt and pepper. Pan-fry till golden brown. Set aside. 
  2. Heat pan and add the sweet chili sauce and soysauce.
  3. Add in the ginger and cook till fragrant.
  4. Add in the sliced pineapple rounds and let simmer in sauce for 2 minutes.
  5. Remove from heat with coriander leaves and drizzle over fish. Serve.
